I received a few requests for this recipe so here it is. I can't take credit for creating it, I took it from a magazine I subscribe to called "Cuisine At Home."
2 Tbsp. olive oil
1 cup diced onion
1/2 cup chopped pepperoni slices
1 Tbsp minced garlic
1 1/2 tsp red pepper flakes
1 tsp dried basil
1/4 cup tomato paste
2 28 oz cans whole tomatoes in juice
1/2 cup vodka
1 fresh bay leaf
1/2 tsp kosher salt
1 Tblsp balsamic vinegar
1/3 cup heavy cream
1/4 cup grated Parmesan
Heat oil in large saute pan over medium high heat. Saute onions and pepperoni until onion is soft. Stir in garlic, pepper flakes and basil. Cook until fragrant, about a minute. Add tomato sauce. Cook one minute. Stir in tomatoes, vodka, bay leaf and salt. Crush tomatoes into chunks with a spoon. Bring sauce to a boil, reduce heat to medium low, and simmer until reduced by a third, about 30 minutes. Discard bay leaf. Stir in vinegar, cream, and Parmesan.
