Apricot Nut Loaf

I have officially started my Christmas baking.  Christmas just isn't Christmas without my mother's apricot nut loaf, toasted and spread with butter, for breakfast Christmas morning.  I make two loaves because I love it so much -- it is my breakfast during the entire season if I can manage it.

Mix:
1 cup sugar
2 Tablespoons room temp butter
1 egg

Stir in:
3/4 cup milk
3/4 cup orange juice
4 teaspoons orange rind






In a separate bowl, stir together:
3 cups flour
3 1/2 teaspoons baking powder
1 teaspoon salt

Add to other bowl and stir into the other ingredients.

Blend into the batter:
3/4 cup chopped nuts
1 cup chopped dried apricots












Pour the batter into a greased bread loaf tin and let it stand for 20 minutes.

Meanwhile, preheat the oven to 350F

Bake for 70 minutes.

    But I cannot do walnuts or dried fruit (sulfite city). :(
